Mini Mince Pies

This is one of my easiest recipes yet. Anything that comes in mini or snack size has Frankie's attention, and they are perfect for a quick lunch or dinner. I usually freeze about 3 small ziplock bags of my Bolognese (just to have a back up when needed) or you can make it specially for this recipe. Just click on the link to my bolognese.

  1. Preheat your oven to 200°C. If your bolognese is frozen, make sure it's defrosted.

  2. Cut out the pastry into discs a bit bigger then your muffin tray holes, then place into the muffin holes.

  3. Spoon in the bolognese, leaving enough space to cover the top with pastry.

  4. Cut out smaller circles, place over the bolognese filling and seal closed by pressing down with a fork.

  5. Bake for 15-20 minutes

Store in air tight container in the fridge for 3-5 days. Can also freeze before baking for 3 months.
