Homemade Potato Chips
Frankie loves snacks, and would happily eat them all day long. So I thought, why not give potato chips a go, instead of the packaged ones. It's not as hard as I imagined, and they get eaten up pretty quick in our house.

Homemade Potato Chips
Ingredients
3 Potatoes (washed with skin on)
1 tbs Olive oil
1 tsp Salt
1 tsp Rosemary
Oil spray
Directions
Using a mandolin slicer, and slice the potato into fine pieces, then soak in bowl of warm water for 5-10 minutes.
Preheat oven to 200°C, lay some foil onto a baking tray and spray some oil (to prevent from sticking).
Drain thoroughly and lay out onto some paper towel (make sure they aren't on top of each other.
Pat dry, then transfer to bowl with oil, salt and rosemary and mix together with your hands.
Lay out in a single layer onto the prepared baking tray.
Bake for 10 minutes, flip them over and cooker another 3-5 minutes. Some chips may be done by 10 minutes, so just take them off the tray before putting the rest back in the oven.
You may need to repeat from step 5 a few times depending on the size of you baking tray and how many chips can fit.
Best eaten same day, but can store in air tight container for 2 days.
