Quinoa Kale Salad

This recipe is one of my Dad's genius creations. He makes it quite often as it goes really well with almost any meal. I tried it at home not even thinking to offer it to Frankie (green stuff, blah). To my surprise, she loves it and always asks for some when I bring it out. It's packed with healthy greens and protein from the quinoa, and it's super easy to make. Might not always go down well with a toddlers taste buds, but us grown ups certainly love it.

Quinoa Kale Salad 

Ingredients

  • 1 cup dry quinoa (makes 3 cooked cups)

  • 2 cups Kale (chopped) I like to use baby kale if you can find some, it's a bit softer and easier to chew

  • 1 capsicum (diced)

  • 2 tbs fresh Lemon juice

  • 4 tbs Olive oil

  • Salt to taste

Directions

  1. Rinse the quinoa well then boil it in 2 cups water for 10-15 minutes, then fluff up with a fork and set aside.

  2. In a large bowl, add the chopped kale and half the olive oil. Then massage the oil into the kale. This helps take the bitterness from the kale.

  3. Add the capsicum and quinoa and pour in the lemon juice, remaining olive oil and a pinch of salt.

  4. Mix it all together and tuck in.

Store in air tight container in the fridge for up 3-5 days.
