Baby Quiche Surprise
Quiche's are so wonderful. They are a great finger food for the little ones, and you can pack as many veg and goodness in as you want. I'm not a huge fan of the crustless quiches, and I don't always have puff pasty on hand. So I decided to improvise with the base, using breadcrumbs and butter. They came out so delicious and were devoured by whole family. Makes 12

Baby Quiche Surprise
Ingredients
1 cup Breadcrumbs
100g Butter
1 Zucchini (finely grated)
1 Carrot (finely grated)
1/2 cup Spinach
5 Eggs
1/2 cup grated Cheddar Cheese
1/4 cup Feta
1/2 tsp Salt
1/2 cup Cream
Directions
Preheat your oven to 220°C and lightly grease your muffin tray.
Melt the butter and pour into a big bowl with the breadcrumbs. Give it a good mix, then place about 2 tablespoons of the mixture into each muffin holes.
Press it down so its nice a smooth, then bake in the oven for 10 minutes.
Once the base has cooked for 10 minutes, take it out a let it rest while you make the quiche.
Simply mix all remaining ingredients together in a big bowl.
Then using a ladle, pour the quiche mixture on top of each muffin base and bake for 15-20 minutes.
Leave to cool for about 10 minutes then take out and enjoy.
Store in the fridge for up to 3 days.
