Green Pancakes

I initially made these little guys for Lex's lunch, but Frankie tried one and couldn't stop. Loaded with good stuff, they are great for a quick breakie and are a prefect finger food for little bitty people. 


Green Pancakes


  • 1/3 cup Fresh spinach 
  • 1/4 avocado 
  • 1 banana (ripe)
  • 1/4 cup Oats 
  • 1/4 cup Self raising flour 
  • 1 egg


  1. Blend all ingredients in a blender, till very smooth. 
  2. Pour 2 tbs sized heaps onto hot pan with butter. 
  3. Cook 2-3 minutes each side and serve.

Store in fridge for up to 3 days.
