Green Pancakes
I initially made these little guys for Lex's lunch, but Frankie tried one and couldn't stop. Loaded with good stuff, they are great for a quick breakie and are a prefect finger food for little bitty people.

Green Pancakes
Ingredients
- 1/3 cup Fresh spinach
- 1/4 avocado
- 1 banana (ripe)
- 1/4 cup Oats
- 1/4 cup Self raising flour
- 1 egg
Directions
- Blend all ingredients in a blender, till very smooth.
- Pour 2 tbs sized heaps onto hot pan with butter.
- Cook 2-3 minutes each side and serve.
Store in fridge for up to 3 days.
