Ok, so our love affair with pancakes is pretty obvious. This one is super simple, Frankie even helps out. She gets so excited to sit on the table top and put all the ingredients in the blender. Getting her involved in the cooking process pretty much guarantees she'll eat, and because it tastes amazing too.
Mini Banana Pancakes
1/2 cup Flour
2 small Bananas
1 tsp Cinnamon
1/2 cup Buttermilk or Milk
1 tsp Vanilla essence
Simply blitz all ingredients together in a blender.
Heat up a frying pan with a little butter and pour a small amount of pancake mixture onto the pan.
Cook for 1-2 minutes each side and repeat till you have used up all the pancake mixture.
Serve with sliced banana, yoghurt or ricotta cheese on the side.
No green stuff in theses ones, but if you want you can put a small handful of spinach or kale into the mixture before blending it.
Store in the fridge for up to 2 days.
