Goodie Balls
Why buy processed snacks for your little people when you can make healthy ones for them yourself? Get them involved in the process too. We try and put a fun angle on the term 'messy'.
Recipe
Goodie Balls
Ingredients
1 cup Raw Cashews
1 cup Roasted Almonds
½ cup Walnuts
1 cup Dates (soaked in water for 1 hour)
¼ cup Shredded Coconut
100g White chocolate (optional)
Directions
Blend the nuts together until finely chopped (but not powdered).
Drain the dates, then add the coconut and dates to the nuts and blend until it all clumps together. This might take a while, add a drop of water if needed.
Line a big plate or chopping board with baking paper. One at a time, grab a small handful of the mixture and roll into small balls and place onto the baking paper. Once rolled all the mixture into small balls, place in the fridge for 1-2 hours.
This step is optional, but I highly recommend it. Melt the chocolate, then dip half of each ball into the chocolate, and refrigerate for 1 more hour.
Enjoy – store in an airtight container for up to 2 weeks in the fridge. We like to wrap each one in some baking paper. It seems to add to the excitement of unwrapping one of these bad boys before devouring it.
