These Almond Cookies are a healthy version of sugary cookies and taste amazing. Try not to eat the whole batch yourself.
250g almond meal
3 tbs rice syrup
1 egg (whisked)
1/2 tsp vanilla extract
1 tsp cinnamon
Preheat your oven to 170°C.
Mix dry ingredients together, then mix in butter (get your hands dirty and rub the butter till it is a crumb like texture).
Add in the egg, rice syrup and vanilla.
Roll dough out onto baking paper with a rolling pin and refrigerate for 1 hour.
Cut into desired shapes and bake for 15min.
Store in airtight container for up to 2 weeks.
