For us, breakfast requires minimal thought and complication (except weekends of course). I'm not a morning person, so it has to be easy. Pancakes are just that and always seem like a treat. This recipe has banana, flax seeds and sultanas, and they are absolutely delicious. 


Fruity Pancakes    


  • 1 Banana

  • 1/2 cup Wholemeal Flour

  • 1/4 cup Milk

  • 1/4 cup Greek Yoghurt

  • 4 Dates

  • 1/2 tsp Cinnamon

  • 1/2 tsp Vanilla extract

  • 1 tbs Flax seeds

  • 2 tbs Sultanas


  1. Blend all ingredients except for the flax seeds and sultanas in a blender.

  2. Once nice and smooth, add the flax seeds and sultanas and mix in using a spoon.

  3. Heat up a pan with a little butter and pour the batter onto the pan.

  4. Cook for 1-2 minutes each side, then serve with some yoghurt on the side.

Best eaten immediately.
