For us, breakfast requires minimal thought and complication (except weekends of course). I'm not a morning person, so it has to be easy. Pancakes are just that and always seem like a treat. This recipe has banana, flax seeds and sultanas, and they are absolutely delicious.
1/2 cup Wholemeal Flour
1/4 cup Milk
1/4 cup Greek Yoghurt
1/2 tsp Cinnamon
1/2 tsp Vanilla extract
1 tbs Flax seeds
2 tbs Sultanas
Blend all ingredients except for the flax seeds and sultanas in a blender.
Once nice and smooth, add the flax seeds and sultanas and mix in using a spoon.
Heat up a pan with a little butter and pour the batter onto the pan.
Cook for 1-2 minutes each side, then serve with some yoghurt on the side.
Best eaten immediately.
