If you fancy baking something sweet without the sugar, you need to give this one a go. It's sugar-free and has only good stuff in it. Be aware though, they are super addictive.
Sugar-free Baby Muffins
6 Egg whites
1 cup Almond meal
150g Butter (melted)
1/2 cup Flour (sifted)
2 tsp grated Orange rind
1 cup Dates
2 tbs Rice syrup
Preheat your oven to 200°C and grease or line a muffin tin with silicone muffin moulds.
Cover the dates with boiling water and leave for 5 minutes to soften.
Whisk the egg whites till they are white and fluffy, then add the almond meal, flour and grated orange rind and mix it all together.
Drain the dates and blitz them till you have a paste.
Add the remaining ingredients, along wit the dates and stir till combined. Then pour into the muffin holes and bake for 20 minutes.
Store in airtight container in the fridge for 3 days.
