Banana bread is such an amazing treat. The smell alone brightens up your home, and it will be thoroughly enjoyed by everyone. This recipe has no sugar in it, and tastes so much better than those with sugar - trust us.
Baby Banana Bread
1/3 cup Melted coconut oil
1/3 cup Rice syrup or Honey
2 Ripe bananas
1/4 cup Milk
1 tsp Vanilla essence
1/2 tsp Cinnamon
1 cup Flour
1/2 cup Almond meal
1 tsp Baking powder
1/4 cup Flax seeds (optional, but recommended)
1 small pinch Salt
Preheat your oven to 170°
Whisk the honey, coconut oil and milk together (if your coconut oil solidifies, just place the bowl in the microwave for 10-30 seconds). Add the mashed banana.
Add the vanilla, cinnamon and eggs and whisk together (make sure the mixture isn't too hot before adding the eggs).
Mix the flour, almond meal, salt, baking powder and flax seeds together in a large bowl.
Add the banana mixture to the flours and mix it together.
Pour into a baking loaf tin and bake for 45-50 minutes.
Allow the bread to cool down in the tin for 10 minutes, then take it out and rest for another 10 before slicing and tucking in.
Served immediately, or stored wrapped in tin foil in the fridge for up to 1 week. Make sure you warm it up before eating.
