Mash potato is delicious. But, like most fussy toddlers, Frankie wont be interested in food unless you can grab it with your hands and easily pop it in your mouth. So I came up with these potato bites that are fun, simple and always go down without a fuss.
2 Potatoes (peeled & quartered)
2-3 tbs Salted Butter
2 tbs Parmesan cheese (finely grated)
Preheat your oven to 225°C and line a baking tray with baking paper.
Boil or microwave your potatoes will very soft.
Mash the potatoes with butter (taste to see if you need more butter).
Roll the mash potato into small balls, place on the prepared baking tray and sprinkle with parmesan cheese.
Bake for 10-12 minutes and serve with some salmon and peas or veggie sausages.
Store in the fridge for up to 1 day or freeze in ball shapes before baking.
