These chewy cashew bars are raw, but still have that decadent taste. They are everything we love, rolled into one mouth-watering, delicious little bar. And will have you hooked at first bite.
Chewy Cashew Bars
1 cup Rolled oats
1/2 cup Desiccated coconut
1/2 cup Cashews
1 Banana (mashed)
1/4 cup Peanut butter
1 tbs Rice syrup
1/2 tsp Salt
1 tbs Coconut oil
Blitz the Oats in a blender till it's ground to a flour, then add it to a big bowl.
Blits the Cashews till they are finely chopped and add it to the bowl of oats.
Next, add the desiccated coconut, banana, peanut butter, rice syrup, salt and coconut oil to the bowl and mix it all together.
Lay a tray with baking paper and spoon the mixture onto the tray.
Using a spoon, level it out till it has a nice and smooth surface, then place in the freezer for 15 minutes.
Once it's hardened, cut it into little squares or desired shapes and enjoy.
Store in the fridge for a week. Can also be frozen for up to 3 months.
