Raspberry & Coconut Icy Pole

This is a fantastic summer treat that we like to enjoy in our back garden. The flavours are a real treat to the tastebuds and I know that Frankie is eating something healthy, as opposed to the bought sugar loaded Icy Poles.

Raspberry & Coconut Icy Pole

Ingredients

  • 1 large Banana

  • 1/2 cup Frozen Raspberries

  • 1/4 cup Greek Yoghurt

  • 3 tsp Honey (if you want to stay away from sugar - add a couple dates instead)

  • 1/4 cup Spinach

  • 1 & 1/2 cup Coconut milk

  • 8 Wooden paddle pop sticks

Directions

  1. Simply blend half the banana, raspberries, yoghurt, honey, spinach and 1 cup of coconut milk in a blender (add a little water if it's not blending well).

  2. Then once smooth (but still thick), pour into ice lollie moulds, leaving about 2-3cm gap at the top. Place the paddle pop sticks in now and freeze for 30 minutes.

  3. Blend the remaining banana and coconut milk together till smooth, then fill each mould to the top.

  4. Freeze for another 30 minutes and then it's ready to serve.

Store in the freezer for up to 3 months, but best eaten within a couple of weeks.
