This tomato sauce is the bomb, and it can be used in so many dishes. You can double the recipe and freeze in small portions so you always have on hand.
Pizza Pasta Tommy Sauce
1 1/2 tbs Olive oil
1 Glove Garlic (crushed)
1 x 400ml can Tinned tomato
2 tsp Mixed Herbs
1 pinch Salt
1 pinch sugar (optional)
Heat the olive oil in a medium sized pot and add the garlic and cook till just about to crisp up.
Add the tinned tomato, herbs and salt and bring to boil.
Once boiling, turn the heat down and simmer and for 20 minutes or so. Stir occasionally, and add a little bit of water if it looks too much like a paste.
Add the pinch of sugar and mix it.
Tip: If it's a little too tart, just add a good glug of olive oil.
Serve with pasta, as a pizza base or as a dipping sauce. You can also freeze in small portion sized ziplock bag for up to 3 months.
