These fritters are a great way to sneak some veg into those tiny tummies. And they taste pretty darn good too. You can get fancy with it as an adult version by making smaller, bit sized fritters and top with sour cream and smoked salmon.
1/2 cup Peas
1 Carrot (grated)
1 cup Cauliflower (boiled)
1 Egg white (whisked)
1/2 cup Flour
1/4 cup Milk
1/4 Parmesan cheese (grated)
1 tsp Salt
1 tsp Mixed herbs
Add the peas, cauliflower and carrot to a bowl. Then add the whole egg, salt, herbs, parmesan cheese and mix it all together.
Add half the flour and the milk, giving it a good mix. Then add the rest of the four and gently fold it through the mixture. Then add the egg white and fold through the mixture again.
Heat up a pan with some olive oil and dollop a spoonful onto the hot pan. Cook for 1-2 minutes each side or till golden brown. Serve with sour cream.
Store in the fridge for up to 3 days.
