We called this one "Great Balls of Chicken Pasta" because we didn't want to say chickenballs, but this is exactly what they are. Meatballs made with chicken mince. Frankie loves this one and little does she know, I've snuck in a few veggies.
Great Balls of Chicken Pasta
250g Chicken mince
1 small Carrot (grated)
1/2 Zucchini (grated)
1/2 cup Breadcrumbs
1/2 tsp Garlic powder
1 Spring onion (chopped)
Salt & Pepper
1/2 Onion (chopped)
500ml Vegetable Stock
1 Tinned tomatoes
Mix the chicken mince, carrot, zucchini, breadcrumbs, spring onion, and seasonings together.
Roll into small balls (about 2 tbs sized) and place on some baking paper, then place in the fridge while you make the tomato sauce.
Heat the onion in a large pan with a little olive oil and sauté till caramelised, then add the tinned tomato and stock.
Once boiling, add the chicken nuggets and simmer for 25-30 minutes. Add more stock if the sauce is evaporating before the chicken is cooked through.
Serve with some pasta.
Store in an airtight container in the fridge for up to 1 week, or freezer for 2 months.
