Oat and Coconut  Biscuits

This is a deliciously chewy and satisfying delight. Frankie loves it for her morning tea at school, and I love it with a cup of english breakfast. We have used sugar in this recipe, but only what’s needed to hold it together. Hope you guys like it.

Oat and Coconut Biscuits

Ingredients

  • 1 cup Self raising flour 

  • 1 cup Desiccated coconut

  • 1 cup Quick oats

  • 120g Melted butter

  • 1/3 cup Caster sugar

  • 1/4 cup Honey 

  • 1/2 tsp Salt (optional)

  • 2 Eggs  (whisked)

Directions

  1. Preheat oven to 180 and line a 27x18cm baking tray with baking paper. 

  2. Mix all ingredients in a large bowl 

  3. Press into prepared baking tray and bake for 30 minutes. Check that it’s a nice golden colour. 

  4. Let it cool down then either cut into squares or cut out shapes using a cookie cutter. 

You might need to bake the cut biscuits for 5 minutes longer. 

* Store in an airtight container for up to 5 days
