This one take less than 20 minutes, and there is no waiting around for the dough to rise. Like any pizza, you can put whatever you like on top to make it as fancy or non-fancy as you like. We have used delicious bolognaise, spinach and cheese.
Mini Pizza Rounds
100g Greek Yoghurt
150g Self-raising flour
1 cup Bolognaise (recipe to follow)
1/2 cup Fresh Spinach
1/4 cup Ricotta
1/2 cup Cheddar cheese (grated)
Preheat your oven to 220°c and line a tray with baking paper.
In a large bowl, mix the yoghurt and flour together (add a little salt at this point if you want)
Knead together till you have a smooth dough, roll it out on a floured surface and cut into small discs.
Place the small discs on your prepared baking tray, and spoon on the bolognaise, ricotta, spinach and cheddar cheese, then bake for 15 minutes.
The dough can be wrapped in cling wrap and stored in the fridge for up to 3 days.
