Baby Cauliflower Pizza
These are a tasty alternative to the traditional pizza. They have a nutty flavour from the cauliflower, with a delightful cheesy topping. Once you've got the cauliflower process out the way, it's pretty easy to make and could be a fun way to involve your little one in the kitchen. I'll be honest, this was rejected when I first offered it to Frankie, but she was having one of those days and ended up loving it and eating it later on for dinner. #parentingstruggles

Baby Cauliflower Pizza
Ingredients
1/2 a Cauliflower
1 cup Cheddar cheese (finely grated)
1 Egg
1 tsp Salt (if using)
1/3 cup Pizza Pasta Tommy Sauce
2-3 Pieces of Ham
Handful of Spinach
1/2 cup Mozzarella
Directions
Preheat your oven to 225°C and line a pizza tray with baking paper.
Process the cauliflower in a food processor till finely chopped, then transfer to a microwave safe food bowl and microwave for 5-7 minutes.
Place the cooked cauliflower in a fine sieve and press down to squeeze out any excess liquid.
Transfer to a big bowl, then add the egg, cheese and salt and mix it all together.
Grab a handful of the cauliflower mixture, roll up into a ball and place on the prepared baking tray, flattening with your hands and bake for 20 minutes.
Add the tomato sauce for the base and then layer the ham and spinach, finishing off with the cheese and bake for 10 minutes.
Can store in fridge for 1 day, but best eaten immediately.
