Coconut Chia

My little boy, Lex absolutely loves this stuff. It's super creamy and packed full of goodness. Chia seeds have all sorts of nutrient dense properties, including high protein, fatty acids and deliciousness. If you want to make it more interesting, add a strawberry purèe or some chopped up fruit.

Coconut Chia

Ingredients

  • 3 tbs Chia seeds

  • 1 cup Coconut milk

  • 1/2 tsp Vanilla essence

  • 2 tsp Rice malt syrup

Directions

  1. Simply mix the ingredients together really well and place in the fridge for 1 hour.

  2. Serve as is or with some chopped fruit and frozen berries.

Store in the fridge for up to 5 days.
