Posh Cupcakes
Not really that posh, but they are cupcakes and refined sugar free. These little guys turned out delicious and creamy. They were pretty easy to make, but just make sure all your ingredients are at room temperature before starting, including your eggs and milk.

Posh Cupcakes
Ingredients
- 1 1/2 cups Plain flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 115g Unsalted butter (softened)
- just under 1/2 cup Rice malt syrup
- 2 Eggs
- 1/3 cup Milk
- 1 tsp Vanilla essence
Directions
- Pre heat your oven to 180°C
- Sift the flour, baking powder and salt into a large bowl and set aside.
- Beat the butter in a seperate bowl till pale, then add the rice malt syrup and beat till fully incorporated.
- Add the eggs, one at a time, then add the milk and vanilla essence.
- Pour in the flour mixture and beat just till it's all combined.
- Spoon mixture into muffin tray and bake for 15 minutes.
- Meanwhile make the cream cheese icing.
Cream Cheese Icing
- 150g Cream cheese (room temperature)
- 2-3 tbs Honey
- 1 tsp Vanilla essence
Directions
- Beat the cream cheese till its thickened quite a bit.
- Add the honey and vanilla essence and beat for about 2 minutes.
- Spread onto the cooled muffins and sprinkle with some coco powder if you like.
Store in the fridge for up to 3 days. The icing may crack, so best eaten same day.
