Choc Fudge Delights

This is a lengthy one. But trust me, it's totally worth it, and you can do it in sections (perfect for those unplanned interruptions), plus they are sugar free. 

Recipe

Chockie Fudge Delights 

Ingredients

Base

  • 1/2 cup raw Cashews

  • 4 tbs Coco powder

  • 1 tbs Rice syrup

  • 1 tbs Coconut oil

Nougat

  • 1/2 cup raw Cashews

  • 1/2 cup Almonds

  • 3 tbs Rice syrup

  • 1 tbs Water

Caramel 

  • 1 cup Dates (soaked in boiling water for 10 minutes)

  • 1/2 cup raw Cashews

  • 2 tbs Peanut Butter (sugar free if possible)

  • 1 tbs Rice syrup

  • 3 tbs Coco powder

  • 1 tsp Vailla essence

Chocolate topping

  • 1 cup Dark Chocolate

  • 1 tbs Coconut oil

 

Directions

Base

  1. Blend all ingredients together in a food processor. Smooth onto a lined shallow tray and freeze while you make the nougat.

Nougat

  1. Blend all ingredients together in a food processor. Smooth on top of the base and place back in the freezer while you make the caramel.

Caramel 

  1. Blend all ingredients together in a food processor. Smooth on top of the nougat and place back in the freezer while you make the chocolate topping.

Chocolate topping 

  1. Simply melt the chocolate either in the microwave, or in a heatproof bowl over a saucepan filled with boiling water over medium heat.

  2. Add the Coconut oil and pour over the fudge layers and refrigerate for an hour or so.

  3. Once the chocolate as hardened completely, take the block out of the tray and cut into small cubes.

Served as a tasty dessert or yummy snack. Stored in an airtight container in the fridge for 1 week or freezer for up to 3 months.
