The Body Coach's baby Halloumi Burger

These bad boys are inspired by a recipe from the Veggie Lean in 15 recipe book by Joe Wicks, The Body Coach. The kids love halloumi, so doing a mini version of Joe’s Peri-peri halloumi burger (without the peri-peri!) seemed like a good idea. Turns out it was a great idea - they’re super simple to make and really delicious. We use mini brioche buns which make it easier for little hands to manage. 


The Body Coach’s baby Halloumi Burger


  • 2 mini Brioche buns

  • 100g Halloumi cheese

  • 1 piece of lettuce

  • 4 Baby tomatoes (sliced)

  • 2 tbs Mayonaise


  1. Slice the cheese into thick slices, then pan fry in some olive oil for 2 minutes each side.

  2. Cut the buns in half and place them onto the pan, bread side down and cook for 2 minutes on a low heat.

  3. Take the buns off the heat, stack the bun with lettuce, followed by the cooked halloumi, tomatoes and drizzle some mayonnaise over it.

  4. Serve with some extra tomatoes or veg on the side.

Best eaten immediately.
