Spinach Pilaf

This is super easy.  It tastes amazing and goes well with almost anything savoury.


Spinach Pilaf


  • 3 cups Basmati rice (cooked)

  • 1 onion (chopped)

  • 1 cup Baby spinach (chopped) or 1/2 cup Frozen spinach

  • 2tbs Butter

  • 1tbs Olive oil

  • 1 pinch Salt (optional)


  1. In a large pot cook the onion in the butter and olive oil until it's softened.

  2. Add the spinach and cook for a further 2 minutes.

  3. Add the rice and stir well so the spinach and butter are nicely absorbed into the rice.

  4. Add the salt at this point (optional - not all parents like giving their littles ones salt - totally up to you).

  5. Serve either on its own or with some fish and chicken nuggets.

Store in the fridge for up to 3 days.  What we also do is pop a serving size into a zip-lock bag and freeze for up to 3 months.
