Cheeky Lentil Burgers

Lenitls are usually given a bad rap, let me be a little rephrase. My husband (the mega meat eater) hates lentils, but I tricked him into tasting these and ended up loving them. For the non-meat eaters or those just trying to get some extra veg into your little ones bellies, you should really give this one a go.

Cheeky Lentil Burgers
Ingredients
- 1 cup Brown Lentils 
- 1/2 cup Breadcrumbs 
- 1 small Zucchini (grated) 
- 1 Carrot (grated) 
- 2 tbs Sour cream 
- 2 Eggs 
- 1 tsp Mixed herbs 
- 1/2 tsp Garlic powder 
- 1/2 tsp Salt 
Directions
- Rinse the lentils in cold water then add to a pot with 2 cups of water and cook for about 15 minutes until the water is absorbed and the lentils are cooked. Add a little more water if needed. 
- Transfer the lentils to a big bowl and add the rest of the ingredients and mix it all together. 
- Heat up a pan with a little olive oil. 
- Roll the lentil mixture into small balls and cook for 4-5 minutes on medium heat, then flip and press them down to make flat disc shapes and cook for another 3-4 minutes. 
- Serve on it's own with some tomato sauce or on a bun with some lettuce and cheese. 
Store in the fridge for up to 3 days.
