Delicious Doughnuts

So, you will need a donut tray for these bad boys. I got sucked into buying one in an Aldi store a while back and thought, ‘when will I ever need this, let me buy it’ Anyway, after many trials and a few errors we’ve created a recipe that is super low in sugar, taste delightful and is airy as a fluffy cloud. Have a read through first, then make the recipe. It will be much easier if you know how to make it before getting stuck in. Makes 9-10 donuts

Ingredients

  • 1 cup Self raising flour

  • 1/2 tsp Salt

  • 1/2 Cinnamon

  • 1/4 tsp Nutmeg

  • 40g Butter

  • 1/4 cup Brown sugar

  • 1/4 Milk

  • 1/4 cup Plain yoghurt

  • 2 tsp Vanilla essence

  • 1 Egg (room temperature)

Sugar topping (optional, but recommended)

  • 1 tbs Butter (melted)

  • 1 tbs White sugar

  • 1 tsp Cinnamon

Directions

  1. Preheat your oven to 180°C and lightly oil a donut tray.

  2. Mix all the dry ingredients together.

  3. In a seperate bowl. Melt the butter in the microwave, then add the remains ingredients and whisk together.

  4. Add the dry ingredients to the wet and mix till just combined. Making sure you don’t over mix at this point or the donuts will come out pretty hard.

  5. Spoon the mixture into a piping bag (if you don’t have one, just use a medium sized zip-lock bag).

  6. Pip into the prepared donut tray to about 3/4 full and give a few whacks on the table to bang out some air bubbles.

  7. Bake for 12-14 minutes.

  8. Place on cooling rack, dip in some melted butter and sprinkle the sugar mixture onto.

* Store in an airtight container in the fridge for up to 2 days, just warm up slightly before eating.
