Chicken nuggets are an easy, fuss free option for most little ones. We've made them a little more nutritious and added some veg to it. You could also make them bite sized for an awesome finger food.
Baked Chicken Nuggets
500g Chicken Mince
1 Zucchini (grated)
1/4 cup Corn kernels
1 tsp Garlic and Rosemary Herbs
1 tsp Salt
1/2 cup Breadcrumbs
1/3 cup Cheddar cheese (finely grated)
Preheat your oven to 200°C and line a baking tray with baking paper.
In a large bowl, mix the mince, zucchini, corn, seasoning, cheese and egg and mix it all together.
Place the breadcrumbs in a bowl, then shape a small amount of the mince into round shapes, coat it in the breadcrumbs and place onto the prepared baking tray.
Once shaped and coated all the mince, drizzle with some olive oil and bake for 15-20 minutes.
Serve with some sour cream and chips.
Can store in fridge for up to 3 days, or in freezer for up to 2 months.
