This is a huge hit in our house. It's an easy way to get some extra iron in their tummies, and it's a lot easier to make than you think. Servers 4
200g Greek Yoghurt
250g self-raising Flour
2-3 cups Fresh Spinach (chopped)
1 cup Grated cheese
1/2 cup Feta
In a large bowl, mix the yoghurt and flour together. Then knead it on a lightly dusted surface until the you have a smooth dough and set aside.
Cut the dough into 4 portions and roll out 1 portion into a round disc about less than 1cm thick.
Generously cover half the dough with chopped spinach, then top with grated cheese and some feta.
Fold the plain side over and press the edges closed.
Heat up a pan on low heat with olive oil (be generous) and simply place the Gozleme and cook for roughly 6 minutes each side.
Serve with a good squeeze of fresh lemon juice.
Could store in fridge for up 2 days, be best eaten straight away.
