Cheesy Polenta Chips
This is a little different, but it’s a nice twist to a traditional polenta. The cheese gives a delicious, creamy taste and baking in little chip shapes makes it perfectly crunchy on the outside, not to mention fun and easy for the kids. Try cutting out different shapes with cookie cutters before baking, and get the kids to help. It will encourage them to try it.

Cheesy Polenta Chips
Ingredients
2 cup Vegetable stock
1/2 cup Polenta
1/2 cup Grated cheese
Olive oil
Directions
Bring the stock to boil in a medium sized pot.
Lightly oil a large baking tray and set aside.
Once boiling, slowly add the polenta and whisk on medium heat for about 10 minutes. (Whisk often)
After the 10 minutes, taste test to make sure it’s cooked. Then add the grated cheese and whisk in till it’s nice and smooth.
Pour into the prepared baking tray and leave to set for 20 minutes.
Preheat your oven to 200°C
Cut the polenta into chip size pieces, then place on a baking tray and drizzle over some olive oil.
Bake for 25-30 minutes.
Best eaten immediately. Can be stored in the fridge for up to 3 days. Reheat in the oven for 10 minuets or so.
