Broccoli Ricotta Cake

This savoury cake is so good. If you’ve got fussy eaters that won’t eat their veggies, you should give this one a go. And if they don’t like it, I guarantee you will. The garlic fried broccoli is a really great taste and the parmesan cheese gives a perfect balance of saltiness. That with the lemon zest. delicious.


Broccoli Ricotta Cake


  • 1 Broccoli

  • 2 cloves Garlic (crushed)

  • 1 tsp Salt

  • 1 small Onion (grated) 

  • 1/2 Lemon zest 

  • 1/4 cup (50g) Parmesan cheese

  • 250g Fresh ricotta 

  • 1 cup self-raising flour 

  • 4 Eggs

  • 2 tbs Olive oil


  1. Preheat oven to 180°C 

  2. Grease a 20cm round cake tin and line the bottom with baking paper.

  3. Steam broccoli for 5 minutes

  4. Heat a pan with a generous amount of olive oil, then add the garlic, broccoli and salt and cook till the broccoli is crispy (about 10minutes).

  5. Meanwhile, add the ricotta, parmesan cheese, grated onion and lemon zest into a large bowl.

  6. When the broccoli is cooked, add to the cheeses, along with the flour, eggs and olive oil and mix together.

  7. Pour into the prepared cake tin 

  8. Bake for 30 minutes. 

Store in the fridge for up to 3 days.
